CAESAR DIP FOR WINGS OR CRUDITES

I make this with my wings. The dip always gets as many raves as the wings do. Try it with veggies or with other meats. I've made it 30 times if I've made it once. The anchovies blend in beautifully. This might be a good starting place for someone just beginning to appreciate anchovies (AngelaK).
I recommend that you make this one day before and refrigerate it covered with plastic wrap in a serving bowl overnight before serving.


  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup freshly and finely grated high-quality Parmesan or Pecorino cheese
  • 1-2 tablespoon fresh lemon juice
  • 4-5 garlic cloves, completely pressed into paste – with no lumps
  • 3-4 anchovy fillets, completely mashed into paste – with no lumps
  • 1 tablespoon finely chopped Italian parsley for garnish

  1. Mix all ingredients thoroughly in a non-metallic bowl.
  2. Season dip with salt and fine, not coarse, pepper.
  3. Cover and chill overnight in refrigerator
  4. Garnish with chopped parsley or cilantro before serving
  5. Serve with lettuce and/or vegetables or with chicken wings or other meats for dipping.
